But research published in 2023 posits that ammonium should be considered the sixth taste since they found humans can apparently detect ammonium chloride, which the scientists describe as "bitter, salty, and a little sour." Detecting ammonia could be a survival mechanism to help detect when certain foods, including seafood, are no longer safe to eat. The work hinged on experiments with human cells exposed to ammonium chloride as well as rodent research.
