Westerners didn't encounter sushi until the mid-1800s

Japan was rather closed off until the mid-1800s, when Westerners, including Americans, began visiting the country and tasting sushi. But it wasn’t until the 1970s that the food became popular outside of Japan. California, in particular, became an American hub for the food, thanks to its large Japanese immigrant population.
