The W. Atlee Burpee seed company began selling the food in the late 1800s, noting its "solidity and crisp, crystalline appearance" in a 1893 catalog.
The large, globular heads of iceberg lettuce were part novelty, but they were also lucrative for farmers because they could be grown year-round and survive long cross-country trips.
