Candy corn was originally called 'chicken feed' to appeal to a rural demographic.

In 1847, a Boston pharmacist invented a machine that automated the production of his pharmacy's medicinal lozenges and then formed the New England Confectionery Company, which later became part of the company now known as NECCO. By the late 1800s, they were producing cookies with Valentine-themed messages and eventually brought the romantic messages to their smaller lozenges, which they later called Sweethearts.

Focusing on a specific kind of candy gives the company expertise on texture, ingredients, factory processes, and more. The company's decentralized production allows for regional specification.

There are a few reasons why American Coke turned away from sugar in the 1980s, but none of them are related to consumer health. This Reader's Digest article breaks down the history behind Coke's recipe change, explaining why the company continues using high-fructose cough syrup.

That style was a way of posting a personalized signature across neighborhoods and would become known as "tagging." In time, that style spread to New York, where it took off among other young people.

The gargantuan summer picnic staple has a fascinating story: 100 million tons are produced worldwide and they take up the most space of any vegetable crop in the world. But not long ago, the flesh of the melon was white and it had a bitter taste.

A passionate fan of Smartfood's white cheddar popcorn investigates why the snack's flavor has diminished over the years. Scarecrows are no longer the best way for farmers to prevent birds from messing with their crops, but the humanlike figures are still found in horror movies. Folklorists say that's because they recall an agrarian past that makes modern viewers uneasy.

Although it provides a defense against insects trying to eat caffeine-bearing plants, the molecule is an example of exaptation, where its original function was repurposed over time. Studies show that some plants now produce caffeine-laced nectar to help pollinators move more quickly and pollinate more efficiently.

Roughly half of all world calories today stem from maize, wheat, and rice. But for most of history, plants were domesticated in highly local places. This video dives into the scientists learning about crops no longer highly in use that once fueled entire civilizations in North America. Some forgotten crops include pitseed goosefoot, maygrass, and sumpweed.

Long after humans developed the means to produce sufficient food to feed civilizations, scientific research focused on a wide variety of objectives, such as developing methods to preserve food quality (accomplished via frozen food), speeding up cooking (leading to the microwave), and lowering the cost of sweetening food, which high fructose corn syrup provides.

In the 17th century, Native Americans cultivated a three-plant combination of corn, beans, and squash—a symbiotic tradition dating back hundreds of years. The corn allowed the beans to climb, the beans fertilized the plants by extracting nitrogen from the air, and the squash leaves protected the soil and preserved moisture. Constant pleaded guilty and was sentenced to 10 years in prison, but died by suicide before serving time.

About a quarter of the world’s agricultural products are contaminated with mycotoxins. Some of these compounds can cause serious health problems, including cancer, so the US government has set up monitoring programs to detect them in our food and in animal feed. Humans can become ill if they eat contaminated food, but also if they ingest products from animals that had previously consumed these toxic compounds, such as milk from a cow that ate contaminated corn.

Love vanilla-flavored foods? Well, it was once made from castoreum - a yellowish exudate from the castor sacs of mature beavers. And the FDA regards castoreum as “natural flavoring."

Ketchup is a tomato-based condiment mixed with vinegar, salt, and spices. The word likely originates from Southeast Asia, where it was used for a common fish brine sauce in the 18th century. This 16-minute podcast explores the chemistry of Mesoamerica's corn tortillas, which involve a 3,500-year-old chemical process called nixtamalization that releases vitamins, including niacin, one of the essential B vitamins. This process also makes the tortillas softer and more delicious. Corn tortillas were a staple in Mesoamerica, and the archaeologist interviewed in this podcast argues cultures like the Aztecs and Maya wouldn't have thrived without nixtamalization.

In recent years, many critics have voiced their concerns about the food industry and how ultra-processed foods affect our health. Despite our awareness of these issues, processed foods are still incredibly hard to remove from our diet. In this podcast by The Guardian, Dr. Chris van Tulleken explains how “junk food” is created to get us hooked, how it negatively affects us, and what we can do to improve our eating habits.

From fortified foods to nutrition labels, the legacy of an early financial crisis lives on in kitchens across the United States. Read more here.

Most modern processed foods rely on a number of preservatives to stay fresh from production to our plates. The most common include citric acid (preservative and flavor), sodium benzoate (preservative), xanthan gum (thickening and stabilizing), carrageenan (thickening), and red dyes 3 and 4 (for color).

Processed foods had existed since the 19th century, but they began infiltrating the mainstream during World War II, with foods designed to last on the battlefield for days. After the war, food companies saw great potential in the relatively cheap foods aimed at busy households.
