Our love of chocolate may have to do with how it ferments than previously realized—with specific microbes associated with more fruity or acetic tastes.

Findings

Additional insights we found via Knowable Magazine

  1. Researchers analyzed the genomes of multiple microbes involved in chocolate fermentation across three Colombian chocolate farms and then fed that data into a computer model. They pinpointed microbial groups associated with distinct flavors.

  2. The work yielded insights including that the yeasts Torulaspora and Saccharomyces are linked to the classic cocoa flavor.

  3. By unlocking knowledge about which microbes are associated with different flavors, future chocolate developers could now potentially conduct more controlled fermentation work in the lab and produce desired flavor notes more consistently.

  4. Climate change and El Niño weather patterns have fueled cocoa harvest challenges and chocolate price instability.
