The flavor of food can be enhanced by combining chemicals known to trigger umami taste receptors with nucleotides—building blocks of DNA and RNA—triggering an effect called umami synergy.

Additional insights we found via MinuteFood

  1. Glutamates bind to taste receptors that trigger signals associated with umami, a savory taste associated with Parmigiano Reggiano, meat broths, and fermented foods.

  2. On their own, the binding of glutamates to taste receptors associated with umami is incomplete, but nucleotides like IMP and GMP further lock glutamates into receptors, enhancing their response by up to a factor of 30.

  3. The combination of glutamates and nucleotides to enhance flavor explains the exceptional savoriness of certain food combinations, such as spaghetti and meatballs, bacon and eggs, and beef and broccoli.
