Developed to reduce the volume of goods—thus lowering storage and shipping costs—the concentration process uses pressure and heat to remove water, pulp, and skin from fruits. Concentrates provide significant flavor, sugar, and calories to foods in small quantities, but do not retain most of the fiber, vitamins, and other nutrients from the source fruit.
